Whip up these energy-boosting snacks for a quick pick-me-up!
Ingredients:
  • 450g pkt chopped dried fruit medley
  • 100g pkt flaked almonds
  • 90g (1 cup) rolled oats
  • 85g (1 cup) desiccated coconut
  • 100g butter
  • 100g (1/2 cup, firmly packed) brown sugar
  • 125ml (1/2 cup) honey
Instructions:
  • Place a sheet of non-stick baking paper in a 16 x 26cm slab pan, ensuring the edges hang over the sides.
  • Mix the dried fruit, almonds, oats, and coconut in a bowl. In a small saucepan over medium heat, cook the butter, sugar, and honey for 4 minutes until sugar dissolves. Bring to a boil, then lower the heat and simmer without stirring for 10 minutes until the syrup reaches soft-ball stage.
  • Mix the syrup into the oats, then firmly press the mixture into the pan. Allow it to cool and set for 6 hours, or until firm. Slice into pieces before serving.
