Cajun prawns with avocado salad

Delicious and vibrant salad that's a breeze to make!
Ingredients:
  • 1kg green banana prawns, peeled, deveined, tails intact
  • 20.00 ml chopped fresh continental parsley leaves
  • 5.00 gm Cajun seasoning mix (MasterFoods brand)
  • 27.30 gm olive oil
  • 1 x 200g pkt mesclun lettuce leaves
  • 200g (1 punnet) grape tomatoes, halved
  • 2 avocados, halved, stones removed, peeled, chopped
  • 3 green shallots, trimmed, chopped
  • 21.00 gm fresh lemon juice
  • Lemon wedges, to serve
Instructions:
  • Preheat your barbecue grill or chargrill on high heat. Toss prawns in a bowl with parsley, Cajun seasoning, and 2 teaspoons of oil. Season with salt and pepper.
  • Grill the prawns on the preheated barbecue or chargrill for 2 minutes per side until they change color and are just cooked through. Transfer to a bowl and lightly cover with foil to keep them warm.
  • Combine the lettuce, tomatoes, avocado, and green shallots in a large bowl. Drizzle with the remaining oil and lemon juice, then gently toss to mix.
  • Plate the Cajun prawns alongside a vibrant avocado salad and lemon wedges for a fresh and flavorful presentation.
