Start your festive meal with tasty Asian-inspired grilled prawns, paired with tangy mango mayo and lime wedges.
Ingredients:
  • 1.5kg raw King Prawns or Banana Prawns, peeled leaving tails intact, deveined
  • 1 long red chilli, seeded, finely chopped (optional)
  • 2 tsp finely grated ginger
  • 62.50 ml coarsely chopped coriander
  • 30.00 ml lemongrass paste
  • 1 mango, stoned, peeled, finely chopped
  • 1 red birdseye chilli, seeded, finely chopped (optional)
  • 1 Free Range Egg yolk
  • 125ml vegetable oil
  • 10.60 gm lime juice
  • Coriander leaves, to serve
Instructions:
  • In a bowl, mix prawns, olive oil, long chili (if using), ginger, chopped coriander, and 1 tablespoon of lemongrass. Let it sit for 15 minutes to enhance the flavors.
  • Combine half of the mango with birdseye chili (if using), mustard, egg yolk, and remaining lemongrass in a food processor. Blend until smooth. While the processor is running, slowly pour in the vegetable oil until the mixture is thick and smooth. Mix in lime juice, season to taste, and blend until combined.
  • Preheat a barbecue grill or chargrill over medium-high heat. Grill the prawns in two batches for 1-2 minutes per side, or until they curl and change color. Transfer to a serving platter and sprinkle with the remaining mango and coriander leaves. Serve with mayonnaise on the side.
