Try these delicious BBQ prawns with fresh mango for a taste of summer.
Ingredients:
  • 20 green king prawns
  • 2 just-ripe mangoes, peeled, diced
  • 250.00 ml coriander leaves
  • lime wedges, to serve
  • 3 small red chillies, deseeded, finely chopped
  • 4 large limes, juiced
  • 82.50 ml grated palm sugar (see note)
  • 48.80 gm fish sauce
  • 2 garlic cloves, crushed
Instructions:
  • Submerge skewers in icy water for 10 minutes.
  • Peel and devein prawns, keeping heads and tails on. Skewer them and arrange in a large ceramic dish.
  • Prepare the marinade by combining all ingredients in a screw-top jar and shaking vigorously until the sugar is fully dissolved. Drizzle half of the marinade over the prawns, making sure to coat them evenly. Cover the dish and let it marinate in the refrigerator for 30 minutes.
  • Combine mangoes and coriander in a bowl. Pour in the remaining marinade and toss to incorporate. Let it rest.
  • 1. Preheat your barbecue grill to medium-high heat. Barbecue the prawns, flipping and lightly coating with the marinade, for about 3 minutes until the shells turn pink and the flesh is thoroughly cooked. Serve the prawns alongside a refreshing mango salad and lime wedges.
