Celebrate summer with succulent prawns and sweet mango.
Ingredients:
  • 60g baby Asian greens
  • 1 large ripe mango, cheeks removed, thinly sliced
  • 24 medium cooked prawns, peeled leaving tails intact, deveined
  • 82.50 ml loosely packed coarsely chopped fresh coriander
  • 2 egg yolks
  • 42.00 gm fresh lime juice
  • 11.80 gm Dijon mustard
  • 2 tsp finely grated fresh ginger
  • 125ml (1/2 cup) peanut oil or vegetable oil
  • 30.00 gm warm water
  • 1 fresh red birdseye chilli, deseeded, finely chopped
  • Pinch of salt
Instructions:
  • Prepare the dressing by combining egg yolks, lime juice, mustard, and ginger in a small food processor. Blend until the mixture thickens. While the processor is running, slowly pour in the oil until the dressing becomes creamy. Add water and chili, then blend until well combined. Season with salt to taste.
  • On each serving plate, beautifully arrange the Asian greens, mango, and prawns. Drizzle with the flavorful dressing and sprinkle with fresh coriander. Serve promptly to enjoy!
