Prawn, mango & rocket salad with chilli dressing

Delicious prawn salad, perfect as a starter or light lunch.
Ingredients:
  • 24 cooked prawns, peeled leaving tails intact, deveined
  • 2 mangoes, cheeks removed, peeled, thinly sliced
  • 1 red capsicum, halved, deseeded, thinly sliced
  • 80g (2 cups) baby rocket leaves
  • 4 shallots, trimmed, thinly sliced diagonally
  • 82.50 ml fresh coriander leaves
  • 60ml (1/4 cup) fresh lime juice
  • 36.40 gm olive oil
  • 2 small fresh red chillies, halved, deseeded, finely chopped
  • 1 garlic clove, crushed
Instructions:
  • Mix together the prawns, mango, capsicum, rocket, shallot, and coriander in a bowl.
  • Mix together the lime juice, oil, chili, and garlic in a bowl to create the flavorful chili dressing.
  • Combine the dressing with the prawn mixture and toss until well coated. Serve in individual dishes for a delightful presentation.
