Whip up a delicious prawn salad for a quick and easy outdoor meal.
Ingredients:
  • 1kg cooked king prawns, peeled leaving tails intact
  • 1 mango, cheeks removed, peeled, cut into thin slices
  • 1 bunch watercress, leaves picked, washed, dried
  • 1/2 red onion, cut into thin wedges
  • 36.40 gm extra virgin olive oil
  • 42.00 gm fresh lime juice
  • 2.25 gm sugar
Instructions:
  • Prepare the zesty lime & mustard dressing by whisking together oil, lime juice, mustard, and sugar in a small jug. Season with salt and pepper to taste.
  • Combine prawns, mango, watercress, and onion in a large bowl, tossing gently until mixed.
  • Evenly distribute the prawn mixture among the serving plates, then drizzle the dressing on top before serving.
