Prawn, mango & caramelised walnut salad

Enjoy a refreshing summer prawn salad bursting with flavors of mango and walnuts.
Ingredients:
  • 100g walnut
  • 32.00 gm brown sugar
  • 2 avocados
  • 2 mangoes
  • 1kg cooked prawns, peeled (tails intact), deveined
  • 1 bunch watercress, leaves picked
  • 3 baby cos lettuce, leaves separated
  • 42.00 gm lemon juice
  • 80ml olive oil
Instructions:
  • Preheat the oven to 170°C, then roast the walnuts on a baking tray for 5 minutes.
  • In a bowl, mix brown sugar with 3 teaspoons of cold water. Add hot nuts and toss to coat them in the sweet mixture. Place the nuts back on the baking tray and roast for an additional 8 minutes until they are perfectly crispy and caramelized. Let them cool before serving.
  • Peel and chop avocados and mangoes, combine with prawns, watercress, cos leaves, and nuts in a large bowl. Whisk lemon juice and oil, season with salt and pepper. Drizzle dressing over the salad right before serving.
