Elevate your fruit salad with honeydew and cantaloupe drizzled in orange syrup, topped with mint sprigs for a refreshing dessert twist!
Ingredients:
  • 1/2 cup sugar
  • 2 teaspoons grated orange peel
  • 1/2 cup fresh orange juice (1 large orange)
  • 1 teaspoon cornstarch
  • 1 tablespoon thinly sliced mint leaves
  • 1 medium honeydew melon, cut in half, seeded
  • 1 medium cantaloupe
  • Fresh mint sprigs, if desired
Instructions:
  • In a 1-quart saucepan, combine sugar, orange peel, orange juice, and cornstarch. Bring to a boil over medium heat, stirring occasionally. Reduce heat to low and simmer uncovered for about 8 minutes until the syrup thickens and sugar dissolves. Add sliced mint, then refrigerate covered for at least 30 minutes, stirring occasionally.
  • Cut the honeydew melon in half, discard the seeds, and use a melon baller to scoop out melon balls into a medium bowl. Cut the cantaloupe in half, remove the seeds, discard the rind, and cut the cantaloupe into 1-inch-thick wedges. Arrange the cantaloupe on a serving platter.
  • Tenderly mix melon balls with chilled syrup. Arrange melon balls on and around cantaloupe; pour over remaining syrup. Top with fresh mint sprigs for a finishing touch.
