Beat the heat with a delicious melon and berry salad.
Ingredients:
  • 3 oranges, juiced, strained
  • 107.50 gm caster sugar
  • 1 cinnamon stick
  • 20.00 ml lemon thyme leaves
  • 1/4 rockmelon, deseeded
  • 800g piece watermelon, deseeded
  • 125g strawberries, washed, hulled, sliced
  • 150g blueberries, washed
Instructions:
  • In a small saucepan over low heat, gently mix together 1 cup orange juice, sugar, and 1/2 cup water until sugar dissolves (about 2 to 3 minutes). Stir in a cinnamon stick and bring to a boil. Increase heat to medium and cook for about 20 minutes, stirring occasionally, until the mixture thickens into a syrup. Add thyme, then set aside to cool for 20 minutes.
  • Scoop balls from rockmelon and watermelon using a melon baller, or cut into slices or small chunks if you don't have a melon baller. Mix with strawberries and blueberries in a large bowl.
  • Remove cinnamon stick then drizzle the cooled syrup over the fruit before serving.
