Melon and Prosciutto

Make this easy appetizer in advance for stress-free entertaining.
Ingredients:
  • 1 cantaloupe, casaba, honeydew or Spanish melon (3 pounds)
  • 1/4 pound thinly sliced prosciutto
Instructions:
  • Cut the cantaloupe in half and scoop out the seeds and fibers. Cut each half into 6 wedges, then remove the rind. Make 1 1/2 inch crosswise slits in each melon wedge.
  • Cut the prosciutto into 1-inch strips, then drape and tuck several strips over each wedge to fill the slits.
