Filo baskets with orange cream and melon

Excite kids with this simple and fun dessert recipe!
Ingredients:
  • 50g (2 1/2 tbsp) butter, melted
  • 2 sheets filo pastry, cut into quarters crossways
  • 10.00 gm almond meal
  • 150g fresh ricotta
  • 2 tsp finely grated orange rind
  • 42.00 gm fresh orange juice
  • 40.40 gm thickened cream
  • 120g watermelon, rind removed, cut into 1cm pieces
  • 100g rockmelon, rind removed, cut into 1cm pieces
  • 80g honeydew melon, rind removed, cut into 1cm pieces
Instructions:
  • Preheat oven to 200°C and lightly brush 12 patty pans with melted butter. Cut the filo strips into thirds to make 12 pieces and cover with a damp tea towel.
  • With adult help, gently place a filo sheet in a muffin pan, sprinkle with almond meal. Brush another filo sheet with melted butter, lay it buttered-side down to create an 8-pointed star. Repeat layering filo, butter, and almond meal.
  • Place in a preheated oven and bake for 8 minutes, or until beautifully golden brown and crispy. Then, transfer to a wire rack to cool thoroughly.
  • In a small bowl, combine ricotta, orange rind, and orange juice. Use an electric beater to blend until smooth and well combined.
  • Spoon a generous amount of orange cream into each pastry case and top with the chopped melon pieces for a delightful treat that kids will love.
