Grape nectarine and banana baskets

Ingredients:
  • 125g seedless red grapes, halved
  • 2 nectarines, sliced
  • 1 banana, peeled, sliced
  • 20.00 ml Cointreau or Malibu
  • 21.00 gm fresh lemon juice
  • 12.00 gm icing sugar
  • 3 sheets filo pastry
  • Olive oil spray
  • 185ml custard
  • Extra icing sugar, to dust
Instructions:
  • Preheat the oven to 200°C, then mix together the fruit, liqueur, juice, and half of the icing sugar.
  • Brush each filo sheet with a light coating of oil. Layer them one by one until all sheets are used. Slice into 6 squares.
  • Prepare 6 x 1/2 cup muffin pans by greasing them. Line the bases with filo squares, then dust with the remaining icing sugar and spray with oil. Bake in the oven for 5-7 minutes until golden brown.
  • Fill pastry cases with creamy custard and an assortment of fresh, vibrant fruit. Sprinkle with a delicate dusting of icing sugar for a touch of sweetness, if desired.
