Easy corn and zucchini filo slice

Make a delicious corn and zucchini filo slice for the family, perfect for packed lunches on-the-go.
Ingredients:
  • 2 corn cobs, husks and silk removed
  • 18.20 gm extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 4 middle bacon rashers, trimmed, chopped
  • 2 small zucchini, grated into long, thin strips
  • 10 sheets filo pastry
  • 50g butter, melted
  • 4 eggs, lightly beaten
  • 120.00 gm smooth ricotta
  • 20.00 ml plain flour
  • 40.00 ml grated tasty cheese
  • Chopped fresh flat-leaf parsley, to serve
Instructions:
  • Boil corn in water for 5 minutes until tender. Drain and cool under cold water.
  • Heat oil in a frying pan until sizzling. Sauté onion and bacon for 6 minutes, stirring occasionally. Mix in garlic and cook for 2 more minutes until onion is soft and bacon is crispy. Keep warm in the pan.
  • Heat your oven to 200C/180C fan-forced.
  • Drain any excess liquid from the zucchini and mix 3/4 of it into the bacon mixture. Carefully cut the corn kernels off the cob in large pieces and keep them aside.
  • Prepare the baking tray by greasing a 2cm-deep, 23cm x 33cm baking tray. Lay down one sheet of filo on a flat surface and brush lightly with butter. Layer another sheet of filo on top and continue this process for a total of 5 sheets. Repeat to make another stack of 5 sheets. Place one filo stack diagonally on the tray to cover 2 corners, then place the remaining stack on the opposite diagonal, pressing the filo into the base of the pan to secure them in place.
  • In a large bowl, combine eggs, ricotta, flour, and cheese. Season with salt and pepper. Stir until combined. Mix in the bacon mixture. Pour into a prepared pan, scrunching the sides of the filo down around the edge. Brush filo edge with butter. Arrange corn on top of the mixture and sprinkle with remaining zucchini. Bake for 30-35 minutes until filling is set and filo is golden and crisp. Let stand for 5 minutes, then sprinkle with parsley before serving.
