Versatile fritters - perfect for kids, a snack, or a light meal for adults. Pair with grilled chicken for a satisfying main dish.
Ingredients:
  • 310g tin corn kernels, drained
  • 150g zucchini, grated
  • 84.98 gm milk
  • 150.00 gm self-raising flour
  • 1.25 gm ground cumin
  • salt and cracked black pepper
  • chopped tomato, to serve
  • chopped avocado, to serve
  • coriander leaves, to serve
Instructions:
  • Combine the corn, zucchini, eggs, and milk in a bowl. Slowly mix in the sifted flour with cumin, salt, and pepper until well blended.
  • Heat oil in a non-stick pan over medium heat. Drop heaped spoonfuls of the mixture into the pan, cooking in batches. Flip fritters when golden and cooked through. Drain on paper towel and keep warm while making the rest.
  • Garnish the cakes with diced tomatoes, creamy avocado, fresh coriander leaves, and a drizzle of sweet chili sauce.
