Zucchini corn fritters with bacon recipe

Kid-friendly zucchini and corn fritters with crispy bacon, a mouthwatering treat all by themselves!
Ingredients:
  • 500g vine-ripened cherry tomatoes
  • 8 bacon rashers
  • 1 large zucchini, coarsely grated
  • 420g can creamed corn
  • 110g self-raising flour
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with parchment paper and arrange the tomatoes on top. Give them a quick spray of olive oil, season to your liking, and bake for 10-15 minutes until the tomatoes start to collapse.
  • Heat a large non-stick frying pan over high heat while you cook the bacon for 2 minutes on each side until it's golden brown and crisp. Transfer the bacon to a plate and cover it with foil to keep it warm.
  • In a large bowl, mix together the zucchini, corn, and flour, then season to taste.
  • Spritz the frying pan with olive oil spray, then adjust heat to medium. Spoon four ¼-cup portions of the zucchini mixture into the pan. Sear for 2 minutes on each side until golden brown and cooked. Transfer to a plate and cover with foil to maintain warmth. Repeat two more times with the rest of the zucchini mixture.
  • Arrange the fritters, bacon, and tomatoes on individual plates for serving.
