Delicious zucchini corn fritters loaded with grated squash, fresh corn, and melty Cheddar cheese.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt
  • freshly ground black pepper to taste
  • 1 cup milk
  • 0.25 cup butter, melted and slightly cooled
  • 2 large eggs, beaten
  • 2 cups grated zucchini
  • 1.5 cups fresh corn, kernels cut from cob
  • 1 cup finely shredded Cheddar cheese
  • 1 quart oil for frying, or as needed
Instructions:
  • Combine flour, sugar, baking powder, cumin, salt, and pepper in a large bowl and whisk until well mixed.
  • In a small bowl, combine milk, melted butter, and eggs; pour into the flour mixture and whisk until smooth. Gently fold in zucchini, corn, and Cheddar until evenly mixed.
  • Preheat oil in a deep fryer or large saucepan to 350°F (175°C). Drop spoonfuls of batter into the hot oil in batches. Fry until golden and crispy, approximately 4 minutes per batch, flipping halfway through using tongs. Place on a plate lined with paper towels to drain.
