Savor late summer zucchini and corn fritters. Enjoy with refreshing raita or minty yogurt.
Ingredients:
  • 3 cups shredded zucchini
  • 2 ears fresh corn, kernels cut from cob
  • 0.25 cup finely chopped onion
  • 0.25 cup all-purpose flour
  • 1 teaspoon curry powder
  • 1 large egg, beaten
  • 0.75 cup olive oil for frying, or as needed
Instructions:
  • Press out any extra liquid from the shredded zucchini, then mix with corn, onion, flour, and curry powder in a bowl. Incorporate the egg until well mixed and season generously with salt and black pepper.
  • In a large nonstick skillet over medium-high heat, heat olive oil to about 1/8 inch depth. Drop 1/4 cup of batter into the hot oil and gently flatten fritters with a spatula. Cook until golden brown on both sides, about 3 to 4 minutes per side.
