Flavorful and healthy Indian-inspired meal.
Ingredients:
  • 200g basmati rice
  • 8 mini pappadums
  • 500g lamb stir-fry strips
  • 56.00 gm mild curry paste
  • 18.40 gm canola oil
  • 1 large red capsicum, halved, deseeded, chopped
  • 3 zucchini, chopped
  • 250.00 ml fresh coriander leaves
  • Natural yoghurt, to serve
Instructions:
  • Prepare the rice using the absorption method as directed on the package. Heat the pappadums in the microwave following the package instructions.
  • In a bowl, mix the lamb with the flavorful curry paste. Keep it aside.
  • In a large frying pan over medium-high heat, heat the oil until shimmering. Add the capsicum and zucchini, tossing for 2-3 minutes until they are just tender. Transfer the vegetables to a bowl.
  • Cook the lamb in the pan for 4-5 minutes until fully cooked. Add the vegetables, coriander, and rice, then mix well. Serve with yogurt and pappadums.
