Savoury curry burger with veggies, peanut butter, and fresh coriander.
Ingredients:
  • 36.40 gm olive oil
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 2 zucchinis, grated
  • 1 large carrot, grated
  • 100g (about 4 slices) wholemeal bread, crusts removed
  • 400g canned chickpeas, rinsed, drained
  • 21.00 gm mild curry paste
  • 62.40 gm crunchy peanut butter
  • 1 egg yolk
  • 60.00 ml chopped coriander leaves, plus extra leaves to serve
  • 6 bread rolls (we used cape seed)
  • Mayonnaise, to serve
  • Chutney, to serve
  • Lettuce, to serve
  • Tomato, to serve
Instructions:
  • In a large frypan over medium-low heat, heat half of the oil and sauté the onion for 5 minutes until softened.
  • Sauté the garlic, zucchini, and carrot for 2-3 minutes until they are tender and flavorful. Remove any excess liquid.
  • Combine bread and chickpeas in a food processor bowl and pulse.
  • Combine the softened vegetables, curry paste, peanut butter, egg yolk, and coriander in a food processor. Pulse until well combined.
  • Shape the mixture into 6 patties and refrigerate for 10 minutes. In a non-stick pan over medium heat, fry the burgers in the remaining oil for 1-2 minutes per side until golden, working in batches if needed.
  • Assemble in rolls with mayonnaise, chutney, lettuce, tomato, and additional coriander leaves.
