Festive, crunchy fritters - perfect starter!
Ingredients:
  • 1 medium zucchini, grated
  • 1 large carrot, peeled, grated
  • 125g sweet potato
  • 1 small red capsicum, finely chopped
  • 5.00 gm mild curry powder
  • plain yoghurt, to serve
  • 99.00 gm self-raising flour
  • 128.75 gm milk
Instructions:
  • For the basic batter, sift flour into a bowl and make a well in the center. In a separate jug, whisk together milk and eggs. Pour the egg mixture into the flour and whisk until smooth.
  • With your hands, gently remove excess moisture from the zucchini and carrot. Mix in zucchini, carrot, sweet potato, bell pepper, and curry powder into the batter, stirring until well combined.
  • 1. Heat a generous amount of oil in a frying pan over medium heat. Use a 1/4 cup measurement for each fritter, cook until golden and cooked through, about 3 minutes per side. Repeat until you have a total of 12 flavorful fritters. Enjoy with a dollop of yogurt.
