Whip up delicious and nutritious veggie fritters for a quick and satisfying snack.
Ingredients:
  • 1 large carrot, peeled, grated
  • 1 medium red capsicum, diced
  • 1 medium corn cob, kernels removed
  • 3 green onions, thinly sliced
  • 250.00 ml plain flour
  • 128.75 gm milk
  • 1 egg
  • 56.00 gm korma curry paste
  • Alfa One rice bran oil cooking spray
  • 125.00 ml reduced-fat plain yoghurt
  • 20.00 ml finely chopped fresh mint leaves
Instructions:
  • Squeeze excess moisture from carrot using your hands. Combine carrot, capsicum, corn, and onion in a bowl, and stir together.
  • In a bowl, sift the flour and season it with salt and pepper. In a separate jug, whisk together the milk and egg until combined. Add the milk and egg mixture to the flour and stir until smooth. Then, mix in the carrot mixture and curry paste until well combined.
  • Start by lightly coating a non-stick frying pan with oil and heating it over medium heat. Spoon 1 tablespoon of the mixture per fritter into the pan and cook them in batches for 2 to 3 minutes on each side until they turn golden brown and are fully cooked. Place the cooked fritters on a wire rack over a baking tray lined with paper towel to drain excess oil.
  • In a small bowl, mix together yoghurt and fresh mint. Season with salt and pepper to taste. Serve the flavourful yoghurt alongside the fritters.
