Curried Zucchini Soup

Quick and delicious soup recipe.
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 1 large onion, halved and thinly sliced
  • 1 tablespoon curry powder
  • sea salt to taste
  • 4 small zucchini, halved lengthwise and cut into 1 inch slices
  • 1 quart chicken stock
Instructions:
  • In a large pot, warm the oil over medium heat. Add the onion, sprinkle with curry powder and salt, and sauté until tender. Mix in the zucchini and cook until tender. Add the chicken stock, bring to a boil, then cover, lower the heat, and simmer for 20 minutes.
  • Blend the hot soup until almost smooth using a hand blender or a regular blender in batches.
