Impossible sweetcorn, bacon and zucchini slice recipe

Savoury zucchini slice with sweet corn and crispy bacon - perfect for dinner and lunch leftovers!
Ingredients:
  • 500ml (2 cups) milk
  • 4 eggs
  • 100g unsalted butter, melted
  • 75g (1/2 cup) plain flour
  • 1 zucchini, coarsely grated
  • 2 rindless middle bacon rashers, coarsely chopped
  • 300g can corn kernels, drained
  • 80g (1 cup) coarsely grated cheddar
Instructions:
  • Preheat your oven to 180C (160C fan forced) and generously grease a 4cm-deep, 18 x 28cm baking dish.
  • In a large jug, combine milk, eggs, and butter, and season with salt and pepper. In a large bowl, sift flour and make a well in the center. Gradually whisk in the milk mixture until smooth. Squeeze excess liquid from zucchini and add to the bowl along with bacon, corn, and half a cup of cheddar. Season again and stir until well combined.
  • Transfer the mixture into the dish and top with the remaining cheddar. Bake for 50 minutes until golden and set. Allow it to cool for 10 minutes before serving warm or cold.
