Unique winter dessert featuring sweet potato and apple.
Ingredients:
  • 1 sheet (25cm x 25cm) frozen ready rolled puff pastry, thawed
  • 300g fresh ricotta
  • Large pinch ground cinnamon
  • 150g sweet potato, peeled, cut into 5mm-thick slices
  • 1 small pink lady apple, cut into 5mm-thick slices
  • 20g butter, melted
  • 2 tsp fresh rosemary leaves
Instructions:
  • Preheat your oven to 200°C and prepare a baking tray lined with non-stick baking paper.
  • Create a 2cm border along the edge of the pastry without cutting all the way through. Carefully move the pastry onto the baking tray.
  • Mix the ricotta and cinnamon until creamy. Spread evenly within a 2cm border.
  • Layer the sweet potato and apple slices on top of the ricotta, then drizzle with the melted butter, sprinkle with brown sugar, and finally sprinkle with fresh rosemary.
  • Bake at 350°F for 30 minutes until golden brown. Serve warm.
