Irresistible mini-latkes, perfect for any occasion.
Ingredients:
  • 2 medium (1 pound) sweet potatoes, peeled and shredded
  • 2 medium green onions, finely chopped (2 tablespoons)
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg, slightly beaten
  • 1 cup sour cream
  • Sliced pecans, if desired
Instructions:
  • Preheat oven to 400°F, then generously grease a cookie sheet before mixing all ingredients, excluding sour cream and pecans.
  • Spoon dollops of sweet potato mixture onto baking sheet; gently press down to flatten.
  • Bake until golden brown, turning halfway through. Serve topped with sour cream and garnished with pecans.
