Whip up 6 effortless mini sweet potato casseroles, mess-free!
Ingredients:
  • 6 medium sweet potatoes
  • 2 tablespoons margarine, softened
  • 1 (8 ounce) can crushed pineapple, drained
  • 0.5 cup pecans, chopped
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) for a perfect bake.
  • Place the sweet potatoes on a baking sheet and roast in a preheated oven for 1 hour.
  • Make a slice into the top of each potato and gently remove the pulp, keeping the skin intact. Place the potato in a big bowl, add margarine and pineapple, then mix well. Fill the mixture back into the potato skins and top with pecans.
  • Place the stuffed potato skins back in the oven and bake for an additional 12 minutes.
