Baked sweet potatoes stuffed with creamy, sweet filling of cream cheese, brown sugar, pecans, and cinnamon - a unique and festive side dish.
Ingredients:
  • 2 sweet potatoes, scrubbed and pierced several times with a fork
  • 0.25 cup cream cheese, softened
  • 1 tablespoon brown sugar
  • 2 tablespoons chopped pecans
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Roast sweet potatoes in the preheated oven for 1 hour and 15 minutes until tender. Allow them to cool before handling.
  • 1. Slice off the top of each sweet potato and scoop out the pulp, leaving a thin shell. 2. Mix the sweet potato pulp with cream cheese, brown sugar, pecans, and cinnamon. 3. Fill the sweet potato shells with the mixture. 4. Place the filled sweet potatoes on a baking sheet.
  • Bake sweet potatoes until warmed through, for 15 to 20 minutes.
