Double-baked sweet potatoes filled with a creamy, sweet mixture of cream cheese, brown sugar, walnuts, and vanilla extract for a decadent twist on a classic dish.
Ingredients:
  • 6 sweet potatoes
  • 2 tablespoons salad oil
  • 1 (8 ounce) package cream cheese, softened
  • 0.33333334326744 cup brown sugar
  • 2 tablespoons margarine
  • 1 tablespoon vanilla extract
  • 0.75 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.33333334326744 cup chopped walnuts
Instructions:
  • Heat your oven to 350 degrees F (175 degrees C).
  • Massage sweet potato skins with a drizzle of salad oil. Coat them in aluminum foil and bake in a preheated oven for about 1 hour, or until tender.
  • In a large bowl, luxuriously blend cream cheese, rich brown sugar, creamy margarine, fragrant vanilla, and a pinch of both salt and pepper.
  • Halve the potatoes and carefully scoop out the flesh into a bowl with the rest of the ingredients. Combine everything thoroughly, then gently incorporate the walnuts. Finally, fill the potato skins with the mixture.
  • Bake until heated through, about 5 minutes.
