Elevate baked potatoes with nutritious sweet potatoes, smoky baba ganoush, and BBQ chicken.
Ingredients:
  • 8 small (about 200g each) gold sweet potatoes
  • 1/2 bunch coriander, sprigs picked
  • 500.00 ml shredded Hot Roast Chicken
  • 150g Smokey Baba Ganoush Dip
  • 125g cherry tomatoes, quartered
Instructions:
  • 1. Preheat the oven to 200°C and prepare a baking tray lined with baking paper. 2. Pierce the sweet potatoes all over with a fork. 3. Microwave the sweet potatoes in 2 batches on high for 10 minutes, turning them once. 4. Transfer the sweet potatoes to the prepared baking tray. 5. Bake the sweet potatoes for 20-25 minutes, turning them once, until they are tender.
  • Set aside a quarter of the coriander sprigs for later. Roughly chop the rest of the coriander sprigs and mix them in a bowl with the chicken and dip.
  • Make a lengthwise slit on the top of each sweet potato using a sharp knife, being careful not to cut all the way through. Gently press the base to open it up and lightly mash the flesh with a fork. Spoon the chicken mixture over each sweet potato and then sprinkle with tomato and reserved coriander.
