Smoky chicken, chorizo and chickpeas

Try this vibrant and flavorful chicken, chorizo, and chickpea dish!
Ingredients:
  • 600g chicken thigh fillets, chopped
  • 36.40 gm olive oil
  • 2 garlic cloves, crushed
  • 2.50 gm smoked paprika
  • 2.50 gm ground cumin
  • 250g chorizo
  • 400g can brand organic chickpeas, rinsed, drained
  • 1 tsp brand balsamic vinegar
  • 1 tomato, chopped
  • 1 long red chilli, sliced
  • 62.50 ml chopped parsley
Instructions:
  • In a bowl, combine chicken, 1 tablespoon of oil, garlic, paprika, and cumin. Toss well to ensure everything is evenly coated. Cover with plastic wrap and let it marinate in the refrigerator for 30 minutes.
  • In a large frying pan over high heat, heat the remaining oil. Cook the chicken for 2-3 minutes on each side until golden brown. Remove from the pan.
  • In a pan, cook chorizo and chickpeas together until golden for 2-3 mins. Add chicken with pan juices. Simmer covered with balsamic for 5 mins until chicken is heated. Stir in tomato, chili, and parsley.
