Chicken and chorizo casserole

Family-friendly chicken casserole with smoky chorizo and hearty potatoes.
Ingredients:
  • 1.2kg chicken, cut into 4 or 8 pieces
  • 1 onion, chopped
  • 3 cloves garlic, sliced
  • 2 x 125g Classic Chorizo, chopped
  • 2 carrots, chopped
  • 62.50 ml fresh curry leaves
  • 125ml (1/2 cup) white wine
  • 480 g potato
  • 23.40 gm Dijon mustard
  • 250ml (1 cup) chicken stock
  • Fresh steamed broccolini, to serve
Instructions:
  • Preheat oven to 180C/160C fan-forced. In a large flameproof (cast iron casserole) oven dish with a lid, heat oil. Season chicken pieces with salt and pepper. Brown chicken on both sides over medium heat for 3-4 minutes each side until golden. Remove and set aside.
  • Sauté onion, garlic, chorizo, and carrot over medium heat for 4-5 minutes until lightly browned. Toss in curry leaves and cook for an additional minute. Pour in wine to deglaze the pan, then simmer until reduced by half. Add chicken back to the pan, along with potatoes and a mixture of mustard and stock. Take off the heat.
  • Place in the oven and bake for about an hour, or until the chicken and potatoes are tender. Serve alongside some steamed greens.
