Chicken, chickpea and chorizo casserole recipe

Elevate your chicken casserole with the irresistible flavor of Leggo’s Rustic Passata for a cozy meal that everyone will love.
Ingredients:
  • 1 brown onion, thinly sliced
  • 1 chorizo sausage, sliced
  • 700g jar Leggo’s Thick & Chunky Rustic Passata
  • 400g can chickpeas, rinsed, drained
  • 8 Australian Chicken Drumsticks
  • 170g polenta
  • 500ml milk
  • 25g parmesan
  • Basil leaves, to serve
Instructions:
  • Preheat oven to 180°C. In a large flameproof casserole pan over high heat, cook onion, garlic, and chorizo for 3 mins until onion softens. Stir in Leggo's Passata and chickpeas, bring to a boil, then remove from heat.
  • Coat the chicken with oil in a bowl, then lay it over the passata mixture in the pan. Bake for 50 minutes, turning the chicken occasionally, until fully cooked.
  • In a medium saucepan over low heat, gently blend the polenta and milk together. Stir continuously for 10 minutes until the mixture thickens. Take off the heat and mix in the parmesan cheese.
  • Portion out the polenta and chicken mixture into individual bowls and garnish with fresh basil before serving.
