One-pot Portuguese Chicken and Chorizo with Chickpeas in Spicy Sauce.
Ingredients:
  • 40.00 ml sambal oelek
  • 4 garlic cloves, crushed
  • 2.50 gm ground cumin
  • 60ml (1/4 cup) lemon juice
  • 1.7kg whole chicken, cut into 8 pieces
  • 2 x 420g cans Chickpeas, rinsed, drained
  • 4 roma tomatoes, coarsely chopped
  • 1 red capsicum, coarsely chopped
  • 1 chorizo, thickly sliced
  • 6 sprigs fresh thyme
  • 250ml (1 cup) salt reduced chicken style liquid stock
Instructions:
  • Preheat your oven to 200°C. In a large bowl, mix together sambal oelek, garlic, paprika, cumin, and 1 tablespoon of lemon juice. Add the chicken and toss until evenly coated.
  • 1. Heat oil in a flameproof roasting pan over high heat. Sear chicken, skin-side down, for 2-3 minutes each side until golden. Set chicken aside. Add chickpeas, tomato, capsicum, chorizo, and thyme to the pan. Pour in stock and remaining lemon juice. Roast for 35 minutes until chicken is cooked.
