Sweet Potato Latkes

Elevate traditional latkes by using vibrant sweet potatoes for a crispy, slightly sweet, and savory dish. Perfect with a dollop of sour cream.
Ingredients:
  • 1 1/2 pounds sweet potatoes (3 large or 4 to 5 medium sweet potatoes)
  • 1/2 medium yellow onion
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 quart vegetable oil, for frying
  • 1/2 cup sour cream, for serving, optional
Instructions:
  • Prep the potatoes and onions: Preheat the oven to 200°F and line a baking sheet with paper towels. Peel and quarter the sweet potatoes and onion. Use a food processor with a shredding disc to shred the vegetables or grate them on the largest holes of a box grater. If needed, thinly slice the onion.
  • Squeeze out excess liquid: Mix shredded potato and onion, then tightly squeeze in a clean kitchen towel to remove excess liquid.
  • Prepare the latke mixture by transferring the wrung-out grated potato and onion to a large bowl. Mix in the flour, eggs, garlic powder, salt, and pepper until combined. Heat 1/2 inch of oil in a large skillet over medium-high heat until hot enough to make a piece of potato sizzle upon contact.
  • Fry the latkes: Using a 1/4 cup scoop, place the latke mix in the pan and flatten it using the measuring cup or spatula. Space out about 4 latkes depending on the pan size. Fry until brown and crisp, about 3 to 4 minutes, then carefully flip. Continue frying until cooked through, browned, and crispy on all sides, an additional 3 to 4 minutes. Transfer the latkes to a lined sheet pan to keep warm in the oven as you cook. Repeat with the remaining mixture, adding more oil to the pan as needed and waiting for it to heat up before adding more latkes. Serve with sour cream. Leftovers can be refrigerated for up to a day.
