Savory sweet potato gratin with fresh herbs, rich cream, and gooey Gruyere cheese layers.
Ingredients:
  • cooking spray
  • 2 cups heavy cream
  • 0.5 stick unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley, or more to taste
  • 1 tablespoon fresh thyme leaves, or more to taste
  • 1 tablespoon minced fresh sage, or more to taste
  • 1 tablespoon minced fresh rosemary, or more to taste
  • 1.5 teaspoons sea salt
  • 0.75 teaspoon ground black pepper
  • 3 pounds sweet potatoes, peeled and thinly sliced
  • 1.5 cups shredded Gruyere cheese
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and generously coat a baking dish with cooking spray.
  • In a saucepan, simmer cream, butter, and garlic, then stir in parsley, thyme, sage, rosemary, salt, and pepper once off the heat.
  • Layer half of the sweet potato slices in the baking dish, followed by half of the Gruyere cheese. Pour the cream mixture over the layers. Add the remaining sweet potato slices and sprinkle the remaining cheese on top.
  • Bake in the oven until golden brown and bubbly, around 30 minutes.
