  • 0.75 cup whipping cream
  • 0.75 cup milk
  • 0.25 cup unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon chopped fresh rosemary
  • 1.5 teaspoons salt
  • 0.75 teaspoon ground black pepper
  • 3 pounds sweet potatoes, peeled and thinly sliced
  • 1.5 cups shredded Gruyere cheese
  • aluminum foil
Instructions:
  • Preheat the oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
  • Combine cream, milk, butter, and garlic in a saucepan over medium heat; simmer. Remove from heat and mix in parsley, thyme, sage, rosemary, salt, and pepper.
  • Layer half of the sweet potatoes in the baking dish, drizzle half of the cream mixture over them, and sprinkle with half of the Gruyere cheese. Repeat the layers and cover with foil.
  • Bake in a preheated oven for 30 minutes. Uncover and bake for an additional 15 minutes until potatoes are tender and the cream and cheese mixture is bubbly and golden brown. Rest for 10 minutes before serving.
