Sweet potato patties recipe

Sweet potato and feta vegetarian patties - a flavorful make-ahead lunch option.
Ingredients:
  • 165g (1 cup) roasted sweet potato (see notes)
  • 2 roast onion wedges, finely chopped (see notes)
  • 20g baby spinach, half finely chopped
  • 20g feta, crumbled
  • 20.00 ml finely chopped fresh continental parsley leaves
  • 20.00 ml plain flour
  • 18.20 gm olive oil
  • 1/2 avocado
  • 10.60 gm fresh lemon juice
  • Greek-style yoghurt, to serve
Instructions:
  • Mash the sweet potato in a bowl using a fork or potato masher. Add onion, chopped spinach, feta, parsley, and flour. Mix well to combine and season to taste.
  • In a frying pan over medium heat, sizzle the oil. Mold the mixture into 3 patties. Sear each side for 2-3 minutes until they turn golden brown and are fully cooked. Place them on a plate lined with paper towel to absorb any excess oil.
  • In a bowl, combine the avocado with fresh lemon juice and mash together using a fork.
  • On a serving plate, place the sweet potato patties next to the mashed avocado mixture, a dollop of yogurt, and the remaining spinach. Season to taste and serve.
