Zesty aioli and arugula perfectly complement flavorful vegetable patties.
Ingredients:
  • 500g sweet potato (kumara), peeled, coarsely grated, excess moisture removed
  • 50g (1/3 cup) plain flour
  • 1 egg
  • 2.50 gm ground cumin
  • 2 garlic cloves, crushed
  • 65g (1/4 cup) aioli
  • 1 lime, rind finely grated, juiced
  • 125ml (1/2 cup) vegetable oil
  • 4 multigrain bread rolls, split
  • 80g rocket leaves
  • 1/2 small red onion, thinly sliced
Instructions:
  • In a bowl, mix together the sweet potato, flour, egg, cumin, and garlic. In a separate small bowl, combine the aïoli, lime rind, lime juice, and season with pepper. Stir both mixtures until well combined.
  • 1. Heat up half of the oil in a non-stick frying pan over medium heat. Shape the sweet potato mixture into 8 patties. Cook half of the patties in the pan for 2-3 minutes on each side until golden brown, pressing down gently to flatten. Place cooked patties on a paper towel-lined tray. Repeat with the rest of the oil and patties.
  • Preheat the grill on high. Place the bread rolls, cut-side up, on a baking tray and grill for 1 minute or until lightly golden.
  • Arrange the rocket and rosti on the bread bases, then layer with a dollop of aïoli, onion, and finally the bread tops.
