Ingredients:
  • 700g sweet potato, peeled, grated
  • 1 egg, beaten
  • 62.50 ml plain flour
  • 60g unsalted butter, melted
Instructions:
  • - Preheat the oven to 150°C. - Combine sweet potato, egg, flour, melted butter, salt, and pepper in a bowl. - Heat oil in a non-stick frying pan over medium heat. - Shape the mixture into 6 patties. - Fry the patties in batches for 2-3 minutes on each side until crispy and golden brown. - Keep each batch warm in the oven. - Serve with the lamb.
