Ingredients:
  • 1kg sweet potato
  • 100g short-cut bacon, from the deli, finely chopped
  • 1 brown onion, finely chopped
  • 2 tsp finely chopped thyme leaves
  • 18.20 gm olive oil
  • 40g butter
  • Coles Brand 4 Leaf Salad, to serve
Instructions:
  • Microwave the sweet potato on high for 5 mins, or until partially cooked. Let it cool, then peel and discard the skin. Grate the sweet potato into a large bowl. Mix in the bacon, onion, and thyme. Season well and toss everything together.
  • Prepare a large frying pan by lining the base with a round piece of baking paper. Heat oil and half of the butter in the pan over medium-high heat. Add the sweet potato mixture, gently pressing it down. Lower the heat to medium and cover. Cook for 20 minutes. Dot the rosti with the remaining butter and top with another round of baking paper. Place a large plate over the pan and carefully flip it. Slide the rosti back into the pan along with the paper base. Cook for 20 minutes or until both sides are golden and tender.
  • Heat a large non-stick frying pan with a bit of grease over high heat. Crack the eggs into the pan and cook until the whites are set, approximately 2-3 minutes.
  • Plate the rosti and fried eggs individually on serving plates, and accompany with a fresh salad on the side.
