Bacon-filled sweet and savory comfort food bites for a quick and delicious Tuesday night treat.
Ingredients:
  • 4 small (about 1kg) sweet potatoes, scrubbed
  • 27.30 gm extra virgin olive oil
  • 1 large red onion, halved, thinly sliced
  • 1 tsp chopped fresh rosemary
  • 200g shortcut bacon, coarsely chopped
  • 125g (1/2 cup) light sour cream
  • 20.40 gm maple syrup
  • 0.63 gm ground nutmeg
  • Large pinch cayenne pepper (optional)
Instructions:
  • Preheat oven to 220C. Make a 6cm-long, 1cm-deep slit in the top of each potato. Arrange potatoes in a single layer in a microwave-safe dish, cover, and microwave on high for 8-9 minutes until tender.
  • Heat 1 tablespoon of oil in a non-stick frying pan over medium heat. Saute onion and rosemary until soft, about 5 minutes. Add bacon and cook until golden, about 5 minutes. Season with pepper.
  • Gently squeeze the base of each potato to open the top using a clean tea towel. Place them on a baking paper-lined tray. Fill each potato with the onion mixture, drizzle with the remaining oil, and roast until the bacon is golden and the potatoes are tender, about 10 minutes.
  • In a small bowl, mix together the sour cream, maple syrup, nutmeg, and a hint of cayenne pepper for a flavorful topping for the stuffed potatoes.
