Delicious sweet potato casserole with bacon and veggies is perfect for any meal or gathering.
Ingredients:
  • 1 teaspoon butter
  • 6 slices bacon
  • 1 large sweet potato, cubed
  • 1 cup chopped broccoli
  • 0.25 yellow onion, chopped
  • 2 cloves garlic, minced, or more to taste
  • 2 cups fresh spinach
  • salt and ground black pepper to taste
  • 6 eggs, or more to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously butter a 9x13-inch baking dish.
  • Fry bacon in a skillet over medium heat until crisp and golden, for about 8 minutes. Then, dice the bacon into coarse pieces.
  • In a skillet, sauté sweet potato, broccoli, onion, and garlic until the onion turns translucent, approximately 5 minutes. Stir in spinach, season with salt and pepper, and continue cooking until spinach is wilted, for 3 to 5 minutes.
  • Whisk eggs in a bowl until foamy. Mix in the savory blend of bacon and spinach. Transfer the luscious mixture into the baking dish.
  • Bake in the oven until golden brown on top and sides, about 35 to 40 minutes.
