Transform leftovers into delicious sweet potato cranberry muffins for a vibrant and convenient treat.
Ingredients:
  • 1 cup mashed, cooked sweet potato
  • 2 large egg whites
  • 0.5 cup white sugar
  • 0.25 cup water
  • 0.25 cup unsweetened applesauce
  • 2 tablespoons canola oil
  • 1 tablespoon vanilla extract
  • 1 tablespoon orange zest
  • 0.75 cup whole wheat flour
  • 2 teaspoons baking powder
  • 0.75 teaspoon salt
  • 0.25 teaspoon baking soda
  • 1 cup cranberry sauce
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 12-cup muffin tin.
  • Combine the sweet potato, egg whites, sugar, water, applesauce, canola oil, vanilla extract, and orange zest in a bowl and mix well.
  • In a separate bowl, combine all-purpose flour, whole wheat flour, baking powder, salt, and baking soda. Mix the flour mixture into the sweet potato mixture until just combined, and gently fold in the cranberry sauce. Spoon the batter into the prepared muffin tin.
  • Bake in the preheated oven for 30 minutes until muffins are golden brown and bounce back when touched gently in the center. Allow them to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
