"Effortlessly delicious vegetable and bacon slow cooker soup, perfect for cozy dinners."
Ingredients:
  • 4 rindless bacon rashers, finely chopped
  • 2 carrots, peeled, finely chopped
  • 2 potatoes, peeled, finely chopped
  • 1 sweet potato, peeled, finely chopped
  • 1 brown onion, finely chopped
  • 1L (4 cups) Stock Beef Style
  • 44.40 gm tomato paste
  • 2 x 400g cans diced tomatoes
  • 62.50 ml fresh basil or continental parsley, coarsely chopped, plus extra leaves, to serve
  • 1 garlic clove, crushed
  • 145g (1 cup) dried macaroni pasta
  • 1 zucchini, finely chopped
  • Shredded parmesan, to serve
Instructions:
  • Grease a large frying pan with olive oil, then toss in the bacon, carrot, potato, sweet potato, and onion. Sauté for 5 minutes until the veggies are tender. Transfer everything to a slow cooker.
  • Pour the stock into the slow cooker, then incorporate the tomato paste until well mixed. Follow by adding the tomatoes, herbs, and garlic. Finally, season to taste.
  • During the last hour of cooking, add the pasta and zucchini before covering and simmering on Low for 1 more hour (or High for 1 hour).
  • Dust the minestrone with parmesan and fresh herbs. Enjoy alongside garlic or herb-infused bread.
