Whip up nutritious brown rice in no time for a satisfying meal.
Ingredients:
  • 750g sweet potato (kumara), peeled, cut into 2cm pieces
  • Olive oil spray
  • 1 tsp ground coriander
  • 450g pkt Uncle Ben's® Microwave Brown Rice
  • 250g broccoli, trimmed, cut into small florets
  • 125.00 ml parsley leaves, coarsely chopped
  • 1 red onion, halved, thinly sliced
  • 40g pepitas, lightly toasted
  • 80ml (1/3 cup) fresh orange juice
  • 21.60 gm honey
  • 70g pkt baby rocket leaves
  • 50g feta, crumbled
Instructions:
  • Preheat your oven to 200°C and prepare a baking tray with non-stick baking paper.
  • In a large bowl, toss the sweet potato with oil and coriander until evenly coated. Season to taste. Arrange in a single layer on a baking tray and spray with oil. Roast in the oven for 20-25 minutes, or until tender.
  • Cook rice according to package instructions, then transfer to a bowl. Fluff the rice with a fork and let it cool for 5 minutes.
  • Boil broccoli in a pan for 2-3 minutes until tender. Immediately cool in cold water, then drain.
  • Combine the potato, broccoli, parsley, onion, and pepitas with the rice. In a jug, whisk together the orange juice and honey until well combined. Pour over the rice mixture, add rocket and feta, then toss everything together. Season to taste.
