Cheesy baked sweet potatoes with bacon and herbs - a decadent and unique side dish.
Ingredients:
  • 10 slices bacon, chopped
  • 1 medium onion, chopped
  • 2 cups heavy whipping cream
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 tablespoon finely chopped fresh thyme leaves
  • 3 cloves garlic, finely chopped
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 1/2 lb sweet potatoes, peeled, cut into 1/4-inch slices
  • 1 cup grated Parmesan cheese
  • 2/3 cup Progresso™ plain panko crispy bread crumbs
  • 2 tablespoons butter, melted
Instructions:
  • Preheat your oven to 375°F and generously coat a 13x9-inch (3-quart) baking dish with cooking spray.
  • In a large skillet, cook the bacon over medium heat for 18-22 minutes, stirring occasionally, until it is crisp. Place the cooked bacon on paper towels to drain. Set aside 1/4 cup of bacon for garnish and reserve 1 tablespoon of drippings in the skillet.
  • Sauté the onion in the skillet with the drippings over medium heat for 5 to 7 minutes, or until softened.
  • Pour whipping cream, broth, cooked onions, thyme, garlic, salt, and pepper into a 5-quart Dutch oven. Bring to a boil over medium heat. Add sweet potatoes and cook for 5 minutes, stirring occasionally.
  • Layer the sweet potato mixture, bacon, and Parmesan cheese in the baking dish, then repeat the layers. Finish by spooning any remaining cream mixture over the top. Cover with foil and bake for 10 minutes.
  • In a small bowl, combine bread crumbs and melted butter until well coated.
  • Uncover the dish, sprinkle the breadcrumb mixture over the top, and bake for 20-25 minutes until the potatoes are tender, the top is golden brown, and the edges are bubbling. Let it rest for 15 minutes after taking it out of the oven before serving. Finish by garnishing with the reserved bacon and a sprinkle of fresh chopped thyme, if desired. Enjoy!
