Bubble and Squeak: A classic British dish made from leftover roasted meat and veggies, fried to perfection. Customize with potatoes, veggies, herbs, bacon, or meat. Served with eggs for breakfast in cockney cafés. The longer it cooks, the tastier it gets.
Ingredients:
  • 1 kg fluffy potatoes such as Maris Piper
  • 600 g mixed vegetables such as carrots, swede, turnips, parsnips, kale, Brussels sprouts... anything you like!
  • 40 g unsalted butter
  • a few sprigs of fresh herbs such as rosemary, sage, thyme or whatever you have knocking about in the fridge
Instructions:
  • Peel and trim all the vegetables, cutting the root veg into 2.5cm dice. Boil the vegetables in salted water for about 10 minutes, ensuring they are all cooked through. Start with swede or turnips 5 minutes before adding the other vegetables. Blanch kale for a few minutes at the end. Drain and let them steam dry. In a non-stick frying pan, melt butter and oil over medium heat. Add chopped herb leaves and cooked vegetables. Season with sea salt and white pepper, then mash everything together. Cook until a golden crust forms underneath, about 3 to 4 minutes. Fold crispy bits back in, flatten and cook for 15 to 20 minutes, focusing on flavor and crispiness. Halfway through, flip it like a pancake for extra flair. Correct seasoning as needed. Serve with HP sauce and desired sides.
