Transform leftover veggies into a satisfying Boxing Day breakfast with this easy recipe.
Ingredients:
  • 500 g mixed vegetables cut into chunks
  • 8 slices higher-welfare cold honey roast ham
  • 750 g floury potatoes cut into chunks
  • olive oil
  • 1 knob unsalted butter
  • 4 large free-range eggs
  • sea salt
  • freshly ground black pepper
Instructions:
  • Boil the potatoes and raw vegetables in a large pot of salted, boiling water for 15-20 minutes until cooked. Drain and let them steam dry. If using leftover vegetables, add them to the cooked potatoes. In a large frying pan, heat olive oil and butter, then mash the potatoes and vegetables together to make bubble and squeak. Cook on medium heat for about 30 minutes, flipping occasionally until golden and crisp. Optionally, finish under a broiler if needed. Poach the eggs in simmering water for 4-5 minutes for soft to firm texture. Serve the bubble and squeak with a seasoned poached egg and ham slices. Enjoy with a cold Guinness!
