Sweet potato bake with bacon crumble

Sweet Potato and Bacon Maple Bake: Layers of sweet potato topped with a savory-sweet bacon and maple crumble.
Ingredients:
  • 850g orange sweet potato, peeled
  • 257.50 gm milk or cream
  • 40g butter
  • 1 small onion, finely sliced into rings
  • 2 bay leaves
  • 200g Rindless Short Cut Bacon, chopped
  • 70g (1 cup) fresh wholegrain breadcrumbs
  • 1 clove garlic, crushed
  • 25g butter, melted
  • 54.00 gm maple syrup
  • 40g (1/2 cup) grated tasty cheese
  • 1/4 bunch fresh sage
Instructions:
  • Preheat your oven to 190C/170C fan-forced. Slice sweet potato into thin 2mm slices. In a heatproof jug, mix together milk or cream, butter, and bay leaves. Cover with plastic wrap and microwave on High for 1 minute. Let it sit for 5 minutes to infuse the flavors.
  • Arrange sweet potato slices in layers, with a third of the onion slices in between each layer, in a 21cm round, 8cm deep ovenproof dish. Pour the milk or cream mixture over the top layer. Cover with baking paper and foil. Bake for 1 hour until sweet potato slices are tender.
  • First, heat a non-stick frying pan over medium heat. Cook bacon, stirring occasionally, for 4-5 minutes until almost crisp. Remove from heat and combine with breadcrumbs, garlic, butter, and syrup in a large bowl. Mix thoroughly, then add cheese, sage, and season with salt and pepper to taste.
  • Uncover the baked sweet potato and discard the bay leaves. Sprinkle on the crumble mixture. Bake for an additional 15 minutes until the top is golden and crisp. Let it rest for 10 minutes before serving.
